Residential Dining Services' Theme Meals

There is always great buzz surrounding Residential Dining’s Theme Meals! Theme meals provide a platform for each of the Dining Commons to host a unique meal inspired by creative ideas and to display our passion for food, on a quarterly basis. These popular events generate interest by celebrating diverse cuisines, hosting one-of-a-kind themes, adding variety to the menu rotation, and creating an educational and fun dining experience for residents and staff. In addition, theme meals provide another creative outlet for our chefs to express their culinary talents by using unique ingredients and creating new recipes. Our talented staff cooked up some mouthwatering menu selections this past Fall Quarter for the following theme meals:

Carrillo cooked up a Korean feast during lunch, serving Korean Short Ribs with Japchae; Korean Pork Sliders; Grilled Eggplant Flatbread; Bulgogi Beef Flatbread; Spicy Korean Noodle Salad with Nuts; Savory Mung Bean Pancakes with Leeks; plus more.

De La Guerra hosted a “Flavors of the South” lunch, featuring Braised Brisket Tacos; Vegan Corn Tamale Casserole with Chipotle Sauce; Salmon Quinoa Cake with Fruit Relish over Mixed Greens Salad; Jalapeño Radish Slaw; Beignets; and more.

Ortega celebrated National Taco Day by hosting a Taco inspired lunch, serving Spicy Shrimp Tacos; Korean Beef Tacos; Potato Vegetable Soft Tacos; Vegan Tortilla Soup; Elote Con Chile; Churros with Cajeta Sauce; and many other options.

Portola featured a Moroccan inspired lunch, creating various dishes including Moroccan-Spiced Chicken with Dates and Pistachios; Marrakesh Vegetable Curry; Braised Beef with Raisins, Coriander and Ginger, in a Burgundy Wine sauce reduction; Crispy Semolina Pancakes (M'smmen) with Honey and Butter; Lemon Cake with Rose Apricot Glaze; Fekkas (pistachio biscotti); plus more.
